Autumn is Here & We Have A Winner!

Happy fall everyone!

I finally had some free time to do what I wanted, and that was bake something to celebrate autumn. I can't tell you the last time that I was able to spend some time in the kitchen! I absolutely love to cook and bake, so today I tried out a new recipe..Almond cake. Oh boy, it was so good! My family loved it..if I could, I would reach through the screen and give you a piece! Here's the recipe:

Almond Cake
1 cup sugar
1 cup white flour
2 beaten eggs
1/2 cup melted butter
1 tsp. almond extract
1/4 cup almonds

Heat oven to 350. Mix all ingredients together with a fork except chopped almonds. Pour mix into a 9x9 greased glass or regular pan. Sprinkle chopped almonds on top of batter and cook for 25-30 min.

I also whipped up a simple light frosting to spread on top and it was quite delicious!
Frosting (if desired)
4 oz Phil Cream cheese
1/2 cup powdered or regular sugar
1/2 tsp. vanilla extract
2 taps of cinnamon
Beat all ingredients together until smooth

1.) Do you have a lucky charm? If so, what is it?
I am not a superstitious person, but I always pray before any big decision or performance. 
2.) How did you meet your very first best friend?
I met her in preschool while coloring; her name was Emily. 
3.) Who is your favorite character from a book?
I would have to say that Elizabeth Bennett is one of my favorites. Her spunk and ability to speak her mind is so refreshing!
4.) What did you always want to be when you grew up?
I wanted to be a marine biologist and work with dolphins and manatees...looking at the job now, uh not so much. I do love going to the aquarium and seeing them, or getting the wonderful experience of seeing them in the wild.
5) What made you decide to start a blog?
I was actually inspired by author and speaker Erwin McManus after having a good conversation with him about writing and how God could use my talents and abilities, as well as a few of my friends who had lovely blogs of their own! Check out A Girl With a Smile and Brittany
6.) Flats or heels?
I love flats, but I'm a heels type of girl. I could wear them everyday!
7.) What is one food that you make better than anybody else?
My family would tell you that I'm pretty good at making almond cake..lucky for you, I posted the recipe so you can make it too!! :)
8.) What was the last really brave thing you did?
I switched to a new university

Well, I hope you are enjoying your week so far!! It finally got a bit cooler over this way, not cool or cold by any means; however, it's that tiny hint of a coolness in the air that is just so refreshing!

Oohh, wow it was indeed a brave thing, switching universities. Must've been a difficult upheaval. Hope it's all good! Communications is fun. Are you more passionate about business or communication? My best friend is doing business and she's enjoying it. She never really saw the appeal in my course, though, and vice versa. Hehe! ;)
