Ok, since fall's official arrival, I've been loving everything pumpkin..my nails are even orange. So what better way to indulge in this lovely fall staple than making some Chocolate Chip Pumpkin Spice muffins...believe me, it's like heaven in your mouth. Oh, and they are under 100 calories and low carb..yep, you're welcome.
2 cups moist-style spice cake mix
1 cup canned pure pumpkin
1/3 cup fat-free liquid egg substitute
1/8 teaspoon salt
1 cup chocolate chips
Preheat oven to 350 degrees.
In a large mixing bowl, combine all of the ingredients with 1/2 cup water. Mix until blended. Line a 12-cup muffin pan with baking cups or spray with nonstick spray and distribute muffin mixture among the cups. Bake in the oven for 15 minutes. Cool muffins completely and enjoy!
You might remember that I tweeted about going on an adventure last week..(What? We're not twitter buddies? Here, let's fix that right now..) and so I have been waiting on the photos to arrive so I could share it with you.
I competed in a pageant, and ended up winning the title! It was a one day event, and quite the fun learning experience. I'm not a pageant girl by any means, but I had decided that this would be something fun to do, and good practice for speaking to audiences, which I'll be doing more of in the near future. The competition had three categories for which we were scored; Patriotic casual wear modeling, On stage introduction, and Evening Gown. I had a lot of fun, met some sweet girls, and walked away with a sparkling crown and the title of Miss Liberty 2011.

Other current queens from different states came in to do the crowning for each of the 6 age categories.

So there you have it, my pageant experience. With a title, comes responsibility, and so I plan on making a positive difference through my time as Miss Liberty.
I don't think the weather here got the whole "autumn" memo.. it's still 90 degrees almost everyday...oh well, I'm off to get my Pumpkin Spice Latte wearing my leather riding boots and cute scarf anyways...What? Starbucks is air-conditioned...
I wrote this about a year ago..it's just an excerpt from a journal I kept, documenting my year at school, and the things God was teaching me. Flipping though the pages, I found memories tucked away in the form of movie ticket stubs, a program from a fashion show I was in, notes from friends and grocery lists along with scripture verses, lessons from God and funny things that happened along the way. Taking time to remember all that I've learned just in the past year was so intriguing and encouraging. It inspired me to be open and ready for new experiences and lessons ahead.
