Because Fall Requires Pumpkin

Ok, since fall's official arrival, I've been loving everything pumpkin..my nails are even orange. So what better way to indulge in this lovely fall staple than making some Chocolate Chip Pumpkin Spice muffins...believe me, it's like heaven in your mouth. Oh, and they are under 100 calories and low carb..yep, you're welcome.


Ingredients:
2 cups moist-style spice cake mix
1 cup canned pure pumpkin
1/3 cup fat-free liquid egg substitute
1/8 teaspoon salt
1 cup chocolate chips

Directions:
Preheat oven to 350 degrees.

In a large mixing bowl, combine all of the ingredients with 1/2 cup water. Mix until blended. Line a 12-cup muffin pan with baking cups or spray with nonstick spray and distribute muffin mixture among the cups. Bake in the oven for 15 minutes. Cool muffins completely and enjoy!

this sounds delicious! question: do you have to use egg substitute or you can you use real eggs? and do you know how many eggs that would be? {no problem if you don't - i can always strong-arm someone to help me experiment!}

The recipe I had used the egg substitute but it should equal 2 regular eggs :)
