Here's a quick roundup of a few things I've been enjoying lately!

2. These white wide-leg trousers (pictured above) are chic, super comfortable and the perfect transitional item from summer to fall. Pair them with a button down, tshirt, or silky top. (p.s. they are currently on sale for under $15, you're welcome!)

3. My latest go-to drink at Starbucks is their Shaken Peach Citrus White Tea. It's so light and refreshing for these warm summer days, and it's under 100 calories.

4. Investing time with inspiring people.
Lately, I've made it a priority to invest time with people who inspire and challenge me to be better. The people we surround ourselves with have a major impact on the person we become, so if you want to get better, evaluate your close relationships and invest more time with people who will help you become the person you want to be.

I am reminded that whatever we choose to achieve or pursue, if it is of great importance or reward, it will often come with challenges along the way. Instead of shrinking back in fear, we should continue to charge forward in faith. No matter what you may be facing today, choose to stay the course and don't give up. Your dream is worth it.

Kitchen Confidential: Lauren's Favorite Granola


 My sister is a fabulous cook and can turn a few basic ingredients into something delicious! I am always amazed at the incredibly delightful combinations she whips up, and this recipe was just too good not to share. Granola is a great breakfast option when you're on the go, or want to add it to your favorite yogurt and fruit parfait. The blend of spices in this recipe fills the house with a delicious aroma as it bakes, and compliments any morning routine. Trust me, one taste of this, and you'll want to make enough for the week! Lauren suggests serving the granola over plain greek yogurt with fresh seasonal berries and a generous drizzle of honey on top. Enjoy!
Lauren's Favorite Granola
1 cup oats
1-2 tablespoons coconut oil
1-2 tablespoons maple syrup
1/4 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of sea salt
1/2 cup chopped almonds
1/2 cup chopped cashews
1/2 cup chopped hazelnuts
1/3 cup dried coconut chips
1/4 teaspoon cardamom
1 tablespoon chia seeds
1 tablespoon flax meal/ground flaxseed
1 handful of unsweetened shredded coconut

Pre-heat oven to 300 degrees. Mix all ingredients together, and add any additional quantities of spices and ingredients to taste.
Line 1 baking sheet with aluminum foil, spread mixture into a thin layer on baking sheet, and bake for 25 minutes at 300 degrees or until lightly golden.

*Optional Tip: Take out baking sheet halfway through the baking time, stir granola mixture, and place back in oven for remainder of baking time

Valentine Breakfast In Bed

Valentine's Day is around the corner, and regardless of your relationship status, it's a fun reason to celebrate all things beautiful. I don't often have breakfast in bed, but what better way to celebrate the holiday than with a batch of fluffy, heart-shaped, coconut waffles?? I'm a fan of coconut anything, and these waffles are perfectly sweet and simple! To create the heart shape, I use a special waffle iron (find a similar one here and another version on sale here). I think you'll enjoy this fun and delicious way to celebrate whether you're cooking for someone else or treating yourself!
Toasted Coconut Waffles
1-3/4 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
Dash salt
3 eggs
1 can (13.66 ounces) coconut milk
6 tablespoons butter, melted
1/8 teaspoon coconut extract
3/4 cup flaked coconut

In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, coconut milk, butter and extract. Stir into dry ingredients just until moistened. Fold in coconut.
Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Serve desired amount of waffles with whipped cream and chocolate topping.
To freeze waffles, arrange waffles in a single layer on baking sheets. Freeze overnight or until firm. Transfer to a resealable plastic freezer bag. Waffles may be frozen for up to 2 months.

(Editor's Note: I used a mix from Trader Joe's, but if you want to whip up a fluffy batch from scratch, this is a great recipe!)


Make sure to include your favorite toppings such as maple syrup, fresh fruit, shredded coconut or powdered sugar, etc. Serve on a small tray with a fresh bloom!

Kitchen Confidential: My Go-To Smoothie

Today's post is all about food! I don't know about you, but I love smoothies. It's fun to get creative combining all kinds of ingredients to create delicious new flavors. Many mornings I'll want something that is simple, quick, and nutritious, and keeps me full until lunch time. I was all about the fruit smoothies until this fantastic recipe for a Chocolate Banana version entered the scene as a recommendation from a friend. Now this is definitely the go-to favorite that I enjoy for breakfast, lunch (at times), or even a snack after a workout. I may be just a little bit obsessed...maybe ;) It's sweet and creamy thanks to the frozen bananas and packs a protein punch that keeps you fueled and full until your next meal! Trust me, one sip and I think you'll have a new favorite too!  Enjoy!

5 Tips for Stress-Free Holiday Entertaining

This time of the year often provides many opportunities to host family and friends for the holidays, and it can be overwhelming if you're not prepared. When it comes to entertaining, here's my five tried and true tips that will help you prepare for and actually enjoy the season's many celebrations. 

1. Create a gift closet/stash. 
You never know when you're going to need that last minute gift for an unexpected guest, late invitation, or surprise event. I like to keep a couple of things on hand like a set of nice notecards, candles, and even a few Starbucks gift cards. No matter what pops up on your calendar or who arrives at your family gathering (Oh hi, Aunt Martha...nice to see you again!), you'll be prepared with gift in hand! 

2. Pick up fresh flowers for the home.
Never underestimate the power of a vase of fresh blooms to spruce up your home! Even if it's a last minute get-together, keeping some flowers on your table is a great way to brighten up the room and provides an 'I was expecting you' kind of vibe for your guests! There's no need to heavily invest into a super expensive arrangement every week. Instead, swing by your local grocery store or even Trader Joe's to pick up a beautiful bunch at a great price. 

3. Light a candle. 
I love candles. There's something so cozy about a big three-wick candle flickering and creating a delightful and festive scent to the home. Guests on the way? I usually will light them about 15-20 min ahead of time to allow the smell to fill the house without being too strong. 

4. Know when to make and when to buy. 
This is a busy time for all of us, and sometimes there's just not enough time to invest an entire day in the kitchen preparing food. One of my go-to's is a gourmet market in town that makes some of the best soups, quiches, and treats. If I'm pressed for time, I'll swing by to pick up a side dish or two, throw together a big toss salad with seasonal fruits and veggies, and pick up a few desserts that can be served in addition to whatever gelato flavors are in the freezer. If you have a favorite recipe that you can whip together in record time, do that and pick up the rest. As long as it's served beautifully, no one will know the difference. It will be our little secret ;) 

5. Enjoy the moment. 
Amidst the hustle and bustle, the hunt for the perfect gifts for family and friends, and the many parties that this season brings, don't forget to enjoy the celebration! One of my favorite things to do around this time of year is to take a moment and reflect on the reason we celebrate this season, and many things I'm grateful for. It is easy to get caught up in the whirlwind or even the stress of the season, but when you're with friends and family, be present. Don't worry if the food is perfect or if so-and-so loves your gift, just enjoy the laughter, listen to the stories, and experience the beauty and joy that comes from being together.

What If We Were Thankful?


As we gather around the table with friends and family this year, let's remember to celebrate the many blessings we've been given! It's easy to brush quickly past Thanksgiving and go straight into the Christmas season, but take a moment and enjoy the time with loved ones, fully experience the moments, make fun memories, cherish the conversations, and make a list of some of the things you're thankful for. I'm reminded of the statement that goes, "what if you woke up tomorrow with only the things you thanked God for?" In light of that, how would that change our prayers? Would we be more attentive to the little things in life? Would we take things for granted as much as we do? I think we would rely less on routine, and be more conscious of every little thing. Life would take on a magical wonder, and there would be a way of graciousness and humility about us. What if we decided to be truly thankful, regardless of our circumstances? No matter where we are in life, we have been given many blessings. Challenge yourself to give thanks for the simple things...breath, sunshine, health, a smile. It will revolutionize the way you view life.

Colossians 3:15-17 says,
"And let the peace of Christ rule in your hearts, to which indeed you were called in one body. And be thankful. Let the word of Christ dwell in you richly, teaching and admonishing one another in all wisdom, singing psalms and hymns and spiritual songs, with thankfulness in your hearts to God. And whatever you do, in word or deed, do everything in the name of the Lord Jesus, giving thanks to God the Father through him."

La Vie Boheme


Oh how I just adore summer! It’s full of easy days spent soaking up the sun, enjoying time with good friends, pool parties, vacation, and sun-kissed skin. One of my favorite things to do during this time of year is to grab some friends and host a dinner party al fresco. I think the best place for a beach bash is anywhere with a view of the water, or right on the beach if you can! While a pretty dinner party may sound complicated, this bohemian-inspired, summer soiree is very simple to put together, leaving you plenty of time to soak up the last rays of sun as you watch the sunset. Here’s your go-to handbook for hosting your own summer party!




Decorate: I love the idea of playing with color and infusing a little free-spirited, boho feel to the decor of a beach bash, so inspired by the two, I chose a color palate in shades of green, cobalt, and aqua. Instead of a traditional place setting, things got a beachy, island vibe with some woven place mats and dark wicker drink holders, and I swapped out a tablecloth for a beach blanket. When you’re going to the beach, it’s best to keep things simple and multi-purpose so you don’t have to lug a lot of things out there, so I used the fresh fruit as part of the “table decor” as well as for snacking, and interspersed a few small lanterns in soft creme to give a little light as the sun set. Individual bowls at each guest’s spot made for easy serving and guests could choose from a buffet of different finger foods, perfect for a lazy afternoon that turns into evening on the beach. Remember to bring along a small garbage bag for easy and fuss-free clean up afterwards!  

Dress: Beach parties are the perfect excuse to bring out the breezy, bohemian style, and it’s such fun for your guests to participate in dressing the part! Colorful bathing suits, maxi dresses, layered up jewels, long earrings, and flowing tops paired with shorts make for comfortable and free-spirited ensembles. Summer is also a great time to try out new braided hairstyles and to rock loose, mermaid waves. For a simple DIY beach-inspired ‘do, combine a bit of sea salt with some water and spritz on semi-damp hair. Let your hair dry naturally and then touch up any ends or pieces with a curling wand. Voila!, Mermaid hair achieved. 


Eat: When things heat up, the last thing you want is a heavy meal, or things that could melt in the sun. Choose your menu according to the time of day that you’re hosting your party, and always check with your guests to ensure that any special dietary needs are accounted for. Since this was an afternoon of fun by the sea, I decided that an array of different snack foods was best, accompanied by a flavorful quinoa salad. Check with your local grocery store and pick up some of the fresh fruits in season to ensure the best and sweetest taste! Strawberries, orange slices and large juicy wedges of watermelon all looked delicious and were perfect for the warm afternoon! In addition to the fruit, some delicate and crispy coconut cookies were a delightful, tropical compliment. Hydration is key in the soaring temperatures, and guests were greeted with a cold, sparkling water in flavors like Pink Grapefruit and Blueberry Lemon. I always enjoy serving fun, fizzy drinks like a sparkling flavored water or lemonade as a peppy addition to the menu! My local gourmet market had created this delicious and colorful quinoa salad, so for convenience sake, I chose to pick some up on the way to the beach, but if you’d like to create your own, it’s easy and fun to experiment with adding some freshly chopped veggies and dried fruits to your quinoa for added flavor. 

As the late afternoon light slowly fades to evening’s glow and sparkles upon the water, enjoy the laughter, mingling conversation, and don’t forget to play in the waves a little! Enjoy summer’s easy, peaceful days, the company of good friends, the sound of the sea, and celebrate this beautiful season! Cheers!

In The Kitchen

Summer is a great time to experiment in the kitchen, and it's also on my list. With all the fresh fruit and veggies in the grocery stores, it's hard not to come home with bags full of the colorful treats. Wraps are kind of a staple in my summer menus (actually all year round, let's be honest), and we decided to jazz them up a little with some roasted veggies and hummus. Happy List


We talk so much about the things that we dislike, don't want, wish were different, want to change, and so on..., but it's oh so much better to think & talk about what we love. One of the things that's helpful for me is to create a "happy list" of the things that make me smile, feel good, and enjoy life! I encourage you to do it too, as it brings such a great perspective. It's also a great way to cure a "bad day" because once you start thinking of a few things that make you smile, more seem to come to you, and sooner or later you're in a happy state of mind!

Fête Friday

It's Fête Friday! We're talking recipes and menu planning this week.
Last week we talked all about how to plan out your menu, what things to pick up vs. making yourself, and speaking of making things in the kitchen, it seems only natural to share a few fun recipes that I've enjoyed for past celebrations! 


I happened upon this amazing recipe (and I mean seriously delish!) for a peach cake on Pinterest this summer, and when planning a summer soiree to celebrate my favorite season and birthday, it seemed only appropriate to use this luscious fruit. Not only was the cake moist and light, but the subtle sweetness of peaches mixed into the batter, coupled with the delightful whipped frosting made for a perfect combination of flavors that enchanted every guest! You'll certainly want to bookmark this one! It's easily tweaked to add any kind of fruit for flavor, hello possibilities!

Two of my favorite (and oh so simple) appetizers were my go-to for a sparkling NYE celebration. Most apps are high in calories, overly filling, and easy to feel guilty about later. Satisfy your guests with something sweet, savory and waistline-friendly (score!) that they'll talk about all night long! 

This comes together so simply, yet packs a lot of flavor. Thinly slice your pears, and sprinkle a handful of crumbled goat's cheese and a handful of dried cranberries on each piece. Finish with a drizzle of honey (if desired), and serve! You'll want to double or even triple this recipe depending on the size of your guest list. 
This tasty crostini is flavorful, rich, and a staple in my entertaining arsenal. It comes together with a few simple ingredients that you can quickly assemble into a savory snack. Begin by slicing up your french baguette into bite size slices (I tend to make these kind of thick because who can resist a big, warm slice of a great baguette??) and spread with hummus. There's many varieties of hummus flavors, but the roasted red pepper, lemon, or even plain tend to be great choices. Chop your celery and green onion (some grocery stores have this combination pre-chopped, if so, save time and pick that up!) and garnish each slice with a generous handful. (Note: you can also add a few chopped green or black olives to each slice) Drizzle with olive oil, and top with freshly cracked black pepper & salt for some extra flavor! This is an excellent addition to a cheese plate, or served alone, but make sure to prepare enough..you're going to want to go back for seconds!

Fête Friday

Every Friday for the next few weeks, we're talking entertaining and event planning! Whether you're interested in event design, or you've been recruited to help a best friend with wedding planning, or perhaps you just love parties (like me!), we'll chat about all things celebratory, and how to throw a beautiful event! We talked about finding inspiration for your fabulous party last week, and once you've got your theme, it's time to talk food, yum! I don't know about you, but I love to try out new recipes! Sometimes among the busy schedules and to-do lists, there's not enough time to craft a 4 course meal, make sure the house is clean, table is set, and the candles are lit, so what's a hostess to do? Well, let's take a look at how to put together a delicious yet time-saving and stress-free menu! 

Every good celebration should have some amazing food (and cake too, but we'll save that topic for later!) so there's a quick three-step checklist I like to refer to when choosing what to serve. 



The first thing to consider is your party's theme. Is there a traditional dish that comes out every year, a particular holiday treat you're just waiting to try, or a favorite of the guest of honor (if there is one)? If it's a certain holiday you're celebrating, it's often fun to align your menu to the day, or if you're hosting a party in celebration of someone, it's a good idea to consult with them to make sure you have their favorites on hand! Also, consider the amount of guests, as well as any food allergies you need to be aware of. Nowadays, there's plenty of meal options for people who have particular conditions, and it's good to find out ahead of time if you need to be aware of any dietary restrictions!

Next, you should think about the time of your swanky soiree. If it's a brunch, you probably are going to lean more towards a breakfast buffet, and not want a bunch of heavy hors d'oeuvres and a soup. Also, as a host, consider the amount of time you'll have to prepare. If you're waiting until the day of to get the food preparation finished, you'll want to streamline your menu, in order to get items purchased and ready in time. Timing is everything!

Finally, consider your budget. If you're investing in fabulous decor, then perhaps you'll want a simple menu, rather than a 4 course meal, or if you're hosting a tasting party, you'll want the food to be the main investment. Expensive doesn't always equal better, and often times a simple meal can be just as suitable and delicious as a costly, catered event. 

Once you've gone through the checklist, and narrowed down your choices, think about any items that you could easily save a little time by picking up. Personally, I enjoy choosing a special dessert item from a local bakery, rather than making that myself, as it not only supports local business, but also makes it easier for me to focus on other details of my party. For certain events, I have chosen to purchase the entire entree from a local gourmet market, or a particular appetizer to add to the spread. Don't feel as though you are required to slave away in the kitchen for hours, preparing the perfect meal; let's be real, most of us don't have the luxury of taking an entire day to make food (if you do, that's fantastic!), so pick up what you need, artfully arrange it in your own dishes (remember, people eat with their eyes first, so presentation is everything!), and no one will know that you didn't work all day long to cook up something fabulous. That can be our little secret! (wink, wink)

A Gatsby Christmas Party


The Christmas season is always a wonderful reason to get friends together for an evening to enjoy some good food, laughter and each other's company (and maybe a fun gift or two!). Each year's party is always eagerly awaited, as we've accumulated stories to share, and reminisce over sparkling raspberry cider. This year's theme was inspired by my halloween costume of Daisy Buchanan from F. Scott Fitzgerald's, The Great Gatsby, and yes, with the recent film adaptation of the book, it only seemed fitting to host a glittery, Gatsby-inspired Christmas party. Everyone donned a glittery frock, headbands (I played with a faux-bob hairstyle), pearls, and even a feather boa to emulate the styles of the 1920's, and we were lucky enough to enjoy an evening under the cafe lights outdoors. White and glittering gold pieces were accented with black, and loose gems sparkled among the decorations as golden lions, elephants, and zebras danced with mini disco balls among the tulips arranged on the table. As we caught up on each other's recent endeavors, and exchanged gifts, we also toasted to the cheerful season, the upcoming new year, and the friendships we're blessed to have. CHEERS!
